Laser welding concentrates heat into a very small zone, so the part distorts far less than it would with conventional TIG or MIG. The bead is fine and regular, and in many cases it needs almost no rework afterwards.
It is the best option when appearance matters, when the part is thin and buckles under traditional welding, or when stainless steel has to be joined in a visible position without leaving heat marks around the seam.
